The Great Summer Kick-off!!!

It's the first day of Summer vacation, and I thought I should get back to blogging. I've been such a slacker, and for that I apologize. My hubby was diagnosed with Diabetes a few weeks ago, and it seems like right now my life revolves around carbs, meal planning, sugar-free, vegetables, glucose testing......well, you get the idea. And once life gets crazy and you get out of the habit, it's so much harder to get posting again.

Anyway, to kick off the Summer season I am offering a great giveaway!!! I'll be giving away a FREE session and an 8x10 print to one lucky reader. This session can be for your family, just the kids, an engagement session, you name it!

Wow! A topic so far out of my element it is amazing. In fact, I recently almost bought a shirt that says, "Vegetables are what FOOD eats." Ha ha ha.

Anyway, the fresher the veggies, the better they get eaten around my house. For example, fresh broccoli is a million times better than frozen.

My favorite way to hide veggies is to puree them or blend them up and add them to casseroles or smoothies. I'm not a big veggie person, but for example, I LOVE spinach lasagna, just blend up the spinach and mix it in with the cheese and sooo good.

I have little kids (who are sooooo cute! you know you want to choose them) who can't chew fresh/raw veggies as well, so steaming veggies is the way to go! I love to use the rice cooker to do this...it's SO easy :)

Veggies are SO important to include in meals and make kids very familiar with. My daughter has always loved veggies, luckily, and eats them better than anything else. Lately our favorite way to include them in a meal is to pick them fresh from our garden. My 2 year old loves to help me pick it all and LOVES to taste everything we pick. SO fun!

WoW you're making me work to enter this give away!!! Sugar and I are the best of friends, but one veggie we love in our home is green beans! A great way to make them tasty is to season them with some butter and garlic salt- SO GOOD!!! Good luck and thanks for the give away my family is SO in need of a photo update :D

It's amazing! I agree with Julie too, when my daughter is involved in the kitchen she tends to 'taste' everything even veggies. :)

I am not the best at this so I look forward to reading other's ideas. I really like to cook asparagus on 400 degrees for 10 min. with olive oil and salt and pepper. This is a favorite thing in our family.

Veggies are tough for me to eat, I'd rather eat fruit anytime...but the best ways I get it into my diet are by using dips. If they are cut up, ready to eat, and next to dip, I will eat them!

My favorite way to enjoy veggies is in stir-fry. Load it up with lots of dark green veggies and you are good to go!

We really like zucchini at our house and in the summer have tons of it. Grate it up and put it in spaghetti or put in the microwave with a little parmesan cheese and Mrs. Dash.

The one thing I've done to start incorporating more veggies into my life, is to eat them before the rest of my meal I'm eating at the time. Usually I can't finish the other, because I ate "the good stuff" first. It's made a huge different in my diet. I feel great, and am getting what I need. I also use Jessica Seinfeld's cookbook "Deceptively Delicious" that was featured on Oprah. It's SUCH A GREAT WAY to incorporate those veggies into foods without husbands/kids noticing. Gotta check it out!

Okay, so my family loves to eat vegatables with our dinner but I hate taking the time to cut and cook them. We love the Birds Eye steamers. They have different combinations and you just put them in the microwave for 5 minutes and they are ready to eat!
I would love to win. We really need to do new a family picture.

Thanks for the opportunity. We love to grill our vegetables. It gives them a wonderful flavor without adding a lot of fat. My boys love zuchinni or yellow squash grilled. This often takes the place of french fries around our house, they dunk it in Ranch dressing, but I enjoy it plain. Cut the zucchini lengthwise so you have the most coverage for the grill. I fill a large two quart bowl with water and a couple of tablespoons of olive oil, garlic POWDER and pepper. I place the cut zucchini in the mixture and let soak for a few minutes. Then we place it on the grill. A couple of minutes on each side and you're done.

It's amazing what you can sneak into spaghetti sauce if you grate it up. That's my favourit trick to use. My kids will eat salad if I put "Sticks" (dried chow mein noodles) on top. Outside of that I struggle to get my kids to eat anything that looks remotely like a vegetable. Good luck.

My favorite snack is broccoli and dip. I also like to cook my vegetables and then put some butter on them. Good luck!

I've found that if I mix the veggies in our main dish that they're eaten more often. I like to put spinach and peas in chicken alfredo, spinach in lasagna, etc.

Hi Jami,

Sorry to hear about the major change in yours and Dave's life. Seeing as how summer is finally getting here one of my favorite things to do with Veggies is to grill them. You can do this a couple ways, in a grill basket with oil and seasoning or on kabobs. The best way is to slice up the veggies and put them in a gallon ziplock baggie with the oil and seasonings of your choice. Let them mix together by rolling them around in the bag. Add them to the grill and cook till tender. They go great with BBQ chicken. Both are yummy and if you go easy on the oil very healthy.

Good Luck I know you guys will find some great recipes along the way. Even if you don't pick me I need to get with you and get more pic's of Isis done. She is growing so fast.

I like to use my food processor and shred them and freeze them. They are ready to throw in any dish

Most any of the sugar free candies they have on the market now are great - they are typically made with splenda. I also have a great low carb cheesecake recipe - if you want it let me know.

I love steamed cabbage. I tear it into little pieces and steam it in one of those metal steamers on the stove. After it is done I lightly spray it with I can't believe it's not butter and a little salt....YUM! Trust me I thought it sounded gross until I tried it.

We love steamed veggies, but I also love to steam cauliflower, and cover it in a mix of mayo and mustard, and then melt cheese on top! MMMM! SO GOOD! This probably doesn't help with diabetes, but it is delicious!

I love to steam the veggies, then sprinkle Vegetable Supreme on them. It gives the veggies an extra special taste, no added butter, and great. My favorite low-sugar snack is to take fat free or low sugar cool whip, softened, and sandwich it between two low sugar graham crackers and pop them in the freezer.

I am interested in the giveaway being a fellowe photographer it is hard to get pics of your own family. I was touched by your story and I guess I am interested in weather your husband has Type 1 or type 2. As far as veggies I do a few things. As soon as I get home from the store or later that night after kids go to bed, I will prepare the food for snacks so I wil peel and cut carrots, celery cucumber, broccoli etc and keep them in containers in the fridge that way they are ready for meals or a snack on the go. Also once a week I will cook some veggies in bulk and puree them and freeze them that way we can just throw them in with a dinner, add to soups or stews or even ground beef for added flavor and nutrients, good luck!!

I have recently started incorporating more veggies into my diet too! I absolutely LOVE grilling veggies! You wouldn't think it would make a big difference but it really does. Also roasting veggies is amazing too, put veggies on a baking sheet, drizzle with olive oil, put oven to 450 degrees and cook for about 45 minutes. These are great to put into sauces, make soups or just serve as a side dish. Good Luck!

Well I just have a little guy so I haven't had to sneak veggies into my meals. Low sugar-- absolutely love peaches! I don't reall know if it is low sugar. I also like to eat the fat free and sugar free pudding.

One of our favorite ways is grilling. Also, I've found that veggies like zucchini and squashes can be sauteed and put in with most casseroles and stove top dishes. They blend in nicely and add great texture and nutrition.

I need all the help I can get to include vegies in my meal as well. I am not creative at all so, I just cook up frozen vegies and put them on the side of the plate.

I love corn on the cob...grilled! It's so easy just soak in for 20 mins in cold water and throw it on the grill turning it ever so often. It takes about 20 mins to cook! Perfect treat!

I am A SAHM to 5 and we are all veggie eaters, I know you have gotten a lot of really great response's already. I even got some Idea's thanks to all who posted before me (wink) I think fresh is great. We also chop everything up into individual servings. Ready to grab and eat. We make lots of fun dipits (that is what my kids call it) It amazing how that works give them something to dip it in and bam it is a hit.

I would love a beautiful family picture!

I have three little kids and I have tried to get them to love veggies from day one.
I always just grate whatever veggies I have with a cheese grater. You can put this grated stuff into almost anything that you make. Usually my family has no idea! Carrots and zucchini are great in muffins and pancakes or soups. My kids love salads, if I fill them up with all kinds of colorful things, ie: I grate purple cabbage, carrots, cucumbers,etc. The pieces are small and most the time the kids really like it!
One tip that has really helped while using veggies at the table and getting my family to like them, is I make just as big of a deal eating them as I would with ice cream and cookies,etc. My husband and I try to make sure we say something positive about them at the dinner table. ie," wow husband, these beans are really yummy, and then we will go back and forth and insert comments into are meal conversation, our kids get curious and find that they kind of do like them, but we let them do it on their own time to discover they like them. Then it becomes a positive experience.
