I have t...I would love a beautiful family picture!<br /><br />I have three little kids and I have tried to get them to love veggies from day one. <br />I always just grate whatever veggies I have with a cheese grater. You can put this grated stuff into almost anything that you make. Usually my family has no idea! Carrots and zucchini are great in muffins and pancakes or soups. My kids love salads, if I fill them up with all kinds of colorful things, ie: I grate purple cabbage, carrots, cucumbers,etc. The pieces are small and most the time the kids really like it!<br />One tip that has really helped while using veggies at the table and getting my family to like them, is I make just as big of a deal eating them as I would with ice cream and cookies,etc. My husband and I try to make sure we say something positive about them at the dinner table. ie," wow husband, these beans are really yummy, and then we will go back and forth and insert comments into are meal conversation, our kids get curious and find that they kind of do like them, but we let them do it on their own time to discover they like them. I absolutely LOVE grilling veggies! You wouldn't think it would make a big difference but it really does. Also roasting veggies is amazing too, put veggies on a baking sheet, drizzle with olive oil, put oven to 450 degrees and cook for about 45 minutes. These are great to put into sauces, make soups or just serve as a side dish. I was touched by your story and I guess I am interested in weather your husband has Type 1 or type 2. As far as veggies I do a few things. As soon as I get home from the store or later that night after kids go to bed, I will prepare the food for snacks so I wil peel and cut carrots, celery cucumber, broccoli etc and keep them in containers in the fridge that way they are ready for meals or a snack on the go. Seeing as how summer is finally getting here one of my favorite things to do with Veggies is to grill them. You can do this a couple ways, in a grill basket with oil and seasoning or on kabobs. The best way is to slice up the veggies and put them in a gallon ziplock baggie with the oil and seasonings of your choice. Let them mix together by rolling them around in the bag. Add them to the grill and cook till tender. They go great with BBQ chicken. Both are yummy and if you go easy on the oil very healthy.<br /><br />Good Luck I know you guys will find some great recipes along the way.
